Ingredients:
FRIED CHICKEN:
- 500 g of chicken fillets, cut into strips
- 2 eggs
- 1/2 cup flour
- Salt and pepper to taste
- Star oil for frying
SAUCE:
- 1 cup peanuts, coarsely chopped
- 3 tablespoons of soy sauce
- 2 tablespoons of honey
- 2 tablespoons of fresh lemon juice
- 2 cloves of garlic, finely chopped
- 1 tablespoon of fresh ginger, grated
Preparation:
Mix eggs, flour, salt and pepper in a bowl. The mixture should be thick, but still easy to spread. Roll the chicken strips in the mixture so that they are well coated. Heat the oil over medium heat. Fry the chicken until golden brown and crispy. Drain the chicken on a paper towel to remove excess oil. In another bowl, mix soy sauce, honey, fresh lemon juice, garlic and ginger. Add the peanuts and cook over low heat until the sauce thickens. Add the fried chicken to the bowl with the sauce and toss to coat the chicken well. Serve with cooked rice or pasta, sprinkle with fresh parsley or chopped green onion.
