FRANCIPAN TART WITH PEARS

 

Ingredients:

Tart Ingredients:

  • 130 g of butter at room temperature
  • 180 g of flour
  • 3 egg yolks
  • 70 g of ground plasma
  • 60 g of powdered sugar

Ingredients for francifan:

  • 100 g Ground Plasma
  • 100 g of almond flour
  • 100 g of crystal sugar
  • 120 g of room temperature butter
  • 2 eggs
  • 4 pears

Decoration:

  • Vanilla ice cream
  • Almond leaves
  • Ground Plasma

 

Preparation:

1. Step

In a large bowl, mix flour, ground plasma and powdered sugar.

2. Step

Cut the butter into cubes and add to the flour.

3. Step

Knead the dough while adding the egg yolks one at a time until it becomes compact.

4. Step

Grease a tart mold with a removable bottom with oil.

5. Step

On a floured surface, roll out the dough with a rolling pin to a thickness of 3 mm.

6. Step

Transfer the dough and pat it into the mold. Prick with a fork and let it rest.

7. Step

Beat the butter, almond flour, ground plasma and crystal sugar until foamy with a mixer, then add the eggs. Beat until the mixture comes together.

8. Step

Fill the tart with francifan.

9. Step

Peel the pears and cut them into thin slices.

10. Step

Arrange them in a circle on the francifan and press them into the surface.

11. Step

Bake the tart at 160 degrees for 30-40 minutes, until it turns golden yellow.

12. Step

Cool the tart at room temperature.

13. Step

Before serving, add a scoop of ice cream, almond flakes and Ground Plasma.
