Ingredients:
- 1 can of tuna in olive oil (preferably wild tuna, MSC certified)
- 1 ripe avocado, diced
- 1 tablespoon of chia seeds
- 1/2 red onion, finely chopped
- 1/2 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup cooked quinoa
- juice of 1 lemon
- 2 tablespoons of oil
- salt and pepper, to taste
Preparation:
Drain the tuna and place it in a large bowl. Break it into smaller pieces with a fork. Add the avocado, red onion, cucumber and cherry tomatoes to the bowl with the tuna. If using cooked quinoa, add that too. Add the chia seeds to the bowl and gently mix all the ingredients.
Dressing:
In a small bowl, mix the lemon juice, oil, salt and pepper. Mix well, then pour the dressing over the salad. Gently mix all the ingredients so that they are well combined and the flavor permeates.
