Ingredients:
DOUGH:
- 220 g of flour
- 30 g of ground plasma
- a pinch of salt
- 1 teaspoon of baking powder
- 2 eggs
- 100 ml of oil
- 1 tablespoon of coconut oil, for flavoring
- 250 ml of yogurt
- 150 g of sugar
FRUIT LAYER:
- 300 g of frozen fruit (raspberries or mixed berries)
- 1 level spoon of flour
CRISPY SPRING:
- 3 tablespoons of flour
- 3 spoons of ground plasma
- 2 tablespoons of brown sugar
- 60 g of cold margarine
Preparation:
1. Step
Preheat the oven to 180 °C. Line the bottom of the mold with baking paper, grease the sides with margarine. If you bake the cake in an ovenproof dish, you don’t need to put paper on it.
2. Step
For the crumbly sprinkle, mix flour, ground plasma, brown sugar and margarine. Rub the margarine into the dry ingredients with your palms so that you get pea-sized crumbs. Leave in the fridge while you prepare the dough.
3. Step
Mix the frozen fruit with a tablespoon of flour and set aside.
4. Step
In a bowl, mix the dry ingredients: flour, ground plasma, salt and baking powder. In another bowl, mix the eggs, oil, coconut oil, yogurt and sugar, then mix well with a wire or a mixer. Add to the dry ingredients and mix everything well.
5. Step
Pour the resulting mixture into the prepared mold, spread it evenly and level it. Then arrange the frozen fruit and add the crunchy sprinkles. Put the cake to bake for about thirty minutes. It is best to do the toothpick test: stick a toothpick in the middle of the cake. if it comes out dry, the cake is baked.
6. Step
Your cake is ready!
